Job Description

The Boston Red Sox are seeking a highly motivated culinary professional to serve as a member of the MLB Performance Staff in providing optimal culinary nutrition within the Player’s Clubhouse at Fenway Park. The Sous Chef will work under the direction of the Executive Chef/Dietitian and collaborate with him alongside other Performance staff for an optimal menu and professional service fitting in the space of a high-performance pro baseball clubhouse environment.The Boston Red Sox Culinary Staff aims to provide fresh, local, sustainable, and nutrient-dense meals tailored to our players and staff. Input, planning, culinary creativity, and expert execution from the Culinary Nutrition team will be utilized regularly to determine team menus to maximize readiness, performance, recovery and injury prevention.RESPONSIBILITIES:
  • Support and assist Executive Chef/Dietitian.
  • Prepare meals and related food items in a timely, clean, and organized manner to meet the specifications of the Executive Chef.
  • Assist with the preparation and design of menus, with attention and knowledge around food allergies.
  • Take charge of kitchen opening, closing and other side duties as directed by the Executive Chef.
  • Adhere to guidelines established by the Executive Chef regarding culinary production, operations, and procurement. This includes receiving, cleaning, preparing, and storing specific menu items, including all raw ingredients, in accordance with specifications of menus and production sheets.
  • Assist the Executive Chef to estimate food requirements and the receipt and maintenance of ingredients received on site in the kitchen.
  • Support managerial direction and open communication between leadership and the Culinary Staff.
  • Keep a professional relationship with staff and players, performing all position duties and responsibilities in accordance with Boston Red Sox company standards of practice.
CHARACTERISTICS / QUALIFICATIONS:
  • 2+ years of experience as a Sous Chef preferred, 3 years minimum as line cook required.
  • Experience working with sports teams in a university, professional, or Olympic setting preferred.
  • Exhibits exceptional attention to detail, high standards of food quality and taste, culinary execution, technique, and presentation.
  • Must have applicable experience in ordering, maintaining, and managing an inventory of items, receiving and stocking supplies, as well as scheduling/planning and applicable procedures.
  • Strong knowledge of wide types of cuisines popular with MLB athletes. Includes Italian, Asian, Americana, BBQ, among others. Ability to adapt recipes to balance quality, flavor and nutrient density.
  • Demonstrable knowledge of pan-Latin cuisine (especially Puerto Rican, Dominican, amp; Venezuelan cuisine) is preferred.
  • Ability to speak fluent Spanish is preferred.
  • Strong communication abilities, with employees, staff and players.
  • Problem-solving capabilities and willingness to thrive in a fast-paced and at times high-pressure environment with high professional standards.
  • Collaborative attitude with an emphasis on excellent customer service.
  • Comfortable working extended hours for multiple meal services, including weekends to coincide with the MLB Regular Season amp; Postseason home schedule at Fenway Park.
  • Knowledge of safety and infection control procedures, as well as safe food preparation required with a valid Food Handler’s Card/Certificate for Massachusetts.
